Peruvian - Chinesse Fried Quinoa

Wash raw quinoa, pour in a pot, add water and let boil for about 10 mins. Once done, set aside and reserve.

Finely mince fresh ginger. Chop green onion in small pieces. Cube chicken breast in small pieces.

In a pan, fry chicken with some oil. Reserve. Stir eggs and in the pan with the chicken stir in the green onion, quinoa and add in soy sauce. If needed, add salt to taste. Serve.
